Maybe the best part from the criticism section:

I always get INFP but I don't think I'm an introvert, just have a lot of social anxiety that stops me being social. A shy extrovert, if you will. Since I hate being alone, being alone is super draining on me. If I could I'd spend every single waking moment with my spouse, which is different from my spouse who is probably a true introvert and needs occasional "alone time".

Because, as psychology has shown, people love to categorize phenomena. Anything that lets us classify "reality" in a few handy boxes is relieving to our brains, which use such techniques to save on quite limited processing power. Our brains are delightful, but anything that speeds up the electro-chemical computing without too heavy a sacrifice in accuracy is well-appreciated, evolutionarily.
Since "personality" cannot be accurately assessed in a very short time frame, even wildly inaccurate tools are acceptable, and appreciated.

When you get into cognitive functions, the system becomes anything but simplistic.
Everyone uses S, N, F, and T. It is just a matter of what order, and in what manner (Si or Se? Ti or Te? This makes quite a bit of difference).
If you do the research, it also explains why some people can look like another type, especially if they're unhealthy. It explains pretty much everything that people criticize.
Introversion and extroversion can blur when there is a strong second function.
Some _e functions are actually more introverted than others and vice-versa. Like Ne. Many ENTPs test as INTPs. That's easy to explain if you know what this stuff really means.
Most people are content to just use shitty tests like humanmetrics, believe the letters only have one meaning each, and dismiss the whole system. Among people who know type, though, humanmetrics is actually considered among the worst on the Internet.

I did. As I mentioned, it changed the IN to ES. My F/T and J/P have always been close to the middle so they flip-flop depending on my mood while talking the test.

The letters don't mean why you think they mean. Everyone uses everything. It's a matter of order. J/P simply tells you which function is extraverted, and I/E presents the order.
I doesn't mean on will necessarily be a shut-in who never talks to people. There is variation. All it means is that they will have a preference for their primary function, but they will use E function, too. P and J have similar thing going on. They just say what functions will be introverted and which will be extraverted.

"Unhealthy" means "mentally unhealthy". It's tough to type people who are schizophrenic, narcissistic, or sociopaths. Typing serial killers is considered a challenge.
Things like sexual orientation, gender identity, and sex (including intersex) don't matter. I had an intersex ex, and she was very easy to type (INFP, with explosions of Fi all over the place and a very Kurt Cobain-ish type of personality). And, no, trans people will not change type during any stage of transition.
If you've studied this, you'd know full well why typing as "INxx" is impossible, so I assumed that you're either a beginner or that you really don't understand this stuff. To be typed accurately, cognitive functions are a must. Going letter-by-letter can be a starting point, but you will need to examine the functions to be accurate.
You could try http://www.cognitiveprocesses.com . You could also try some of the stickies on sites like typologycentral and personalitycafe, but be careful. Check the people's sources.
