Because it's a dead-end job. You start working on McDonald's and the only career advancement you can get is working on a higher level of McDonald's. Listen. $14 an hour might be good if you're in your early twenties. But you're going to be expected to support a family at some point. You can't do that at $14 an hour. There's a reason no one's going into them anymore. That and the unions are losing a lot of power. Trade jobs once came with top of the line benefits and such. You were living middle class if you had a trade job. Now they're just working class jobs with a lot of future insecurity. Anyone who doesn't see the necessity of a college degree in todays job environment hasn't opened their eyes to reality and numbers. It sucks, the colleges bleed you dry of money most of your twenties, the security isn't there like it once was, all those things are true. But the job market has more or less cornered us all into having to get that shit and becoming indebted for a decade. The market's bleeding the worker to death these days

It's not insurmountable like I might be making it sound, but it's a huge barrier to get around in today's market.
