Lithuania has five ethnographic regions. The one of particular interest is Samogitia. Despite Lithuania having been a Catholic country for several hundreds of years, a large portion of rural Samogitians are still pagan. Every year, the 5th of december, some white guy in a red suit and a hat comes in and has Moor slaves. These are all blackface white dudes in colourful outfits.
Mostly for kids but it is an excuse to eat like an animal.
Legend has it he came from Spain, but it is actually a Turkish bishop from Mira, who sailed to Europe a few times, including the Netherlands, to help kids, and he did in fact have Moor slaves, but was known for his excellent treatment of them.

Various things. Basically anything involving ground meat can be expected to have some sort of ground organs in it (nobody wants to waste it, even though they taste disgusting). Sausage is made by wrapping the meat in pig intestines, the cow intestines are used in a type of sauce.
